Aztec Bread
1/2 cup butter
2 large eggs
1/4 cup milk
1 cup yellow cornmeal
1 tsp salt
1/2 tsp baking soda
1 15 oz can corn, drained
4 oz sharp cheddar, diced
Preheat the oven to 400. Melt 6 tablespoons butter over low heat. Beat the eggs and milk together. Mix the cornmeal, salt and baking soda. Add the dry ingredients to the milk and egg mixture, along with the corn, cheese and melted butter. Mix thoroughly.
Place the remaining 2 tbs butter in an ovenproof c. 7" square glass baking dish and put it in the oven just until it is melted (watch that it does not burn). Distribute the melted butter onto the bottom and sides of the dish, using a pastry brush if necessary (I carefully tilted the pan). Pour the batter into the dish and spread it evenly.
