Pastry

300g plain flour,15g baking powder,100g butter,25g ground walnuts,2 eggs, London Gold to mix.
腌 料 :

Fillings
1 roasted onion with 4 char-grilled fresh asparagus spears,
1 roasted onion with 2 artichoke halves,
1 roasted onion with,
1-2 char-grilled red peppers,
1 roasted onion with 2-3 soaked sundered tomatoes

调味料 :
custard sauce
3 eggs,
150ml London Gold,
125g cream cheese,
15-25ml balsamic vinegar,
chopped herbs or flavourings,
50g grated parmesan cheese

做 法 :
Make up the pastry and line 6-8 individual tart tins. Bake blind. whisk eggs in a bowl with the London Gold and cream cheese. Season and strain. Add chopped herbs and balsamic vinegar if desired.
Arrange fillings in pre-baked fan causes, pour over a little of the sauce, sprinkle with Parmesan.
Bake in a low to moderate oven(150℃/gas mark 4) until the custard is set. Sever with salad leaves, fresh herbs and fried balsamic onion slices.
For the roasted onion, peel and cut through almost to the base. fan out ,brush with oil, roast until golden and tender. Use as a filling for the tarts or tossed Oita balsamic vinegar in the salad.

This diet works on chemical breakdown and is proven.Do not vary or substitute any of the above food.Salt and pepper can be used but on other seasoning.Where on quantity is given there is no restrction other than COMMOM SENSE

Tea Eggs Recipe 茶鸡蛋的做法

Tea eggs, also called marbled eggs, are distinctive looking and easy to make. Serve them as a snack or with a dim sum lunch, for breakfast Easter morning or during the Chinese New Year season.

Cook Time: 2 hours, 30 minutes

Ingredients:

* 6 eggs

* 3 1/2 cups cold water, or as needed

* 1 teaspoon salt

* 2 tablespoons soy sauce

* 1/2 cup brewed black tea

* 2 star anise, broken into individual pieces

* 1 cinnamon stick

Preparation:

Place the eggs in a saucepan with the water, making sure that there is at least 1/2-inch of water above the eggs. Cover and bring to a rolling boil. Remove the saucepan from the element and let the eggs stand in the hot water for 15 - 20 minutes, until they are cooked. Remove the eggs and run them under cold running water to cool. (Reserve the water in the pan).

Tap the hard-boiled eggs gently with the back of a spoon, to make a series of cracks all over the eggshells, while making sure the shell remains intact. (If the shell does come off, don't worry - it just means that egg will have a darker color than the others).

Bring the water in the pan back to a boil. Add the salt, soy sauce, brewed black tea, star anise pieces, and the cinnamon stick. Add the eggs. Simmer, stirring occasionally, for 2 hours. Turn off the heat and let the eggs sit in the hot liquid until ready to serve. Serves 6.

'Firecracker' prawns

Ingredients
12 large prawns, in the shell
¼ tsp garlic salt
2-3 large carrots cut into 24 very thin batons, each 1cm/¼in longer than the prawns
700ml/1¼ pint buttermilk
vegetable oil, for deep frying
175g/6oz plain flour
50g/2oz polenta
1 tbsp chilli powder
2-3 tsp sea salt
pinch black pepper
For the dipping sauce
85ml/3fl oz mayonnaise
2 tsp hot chilli sauce, or to taste

Method
1. Remove the shells from the prawns, leaving the tail intact. Make an incision with a sharp knife down the back of each prawn. Rinse out the vein from the prawn. With a sharp skewer, make a hole through the centre of the prawn, from top to tail.
2. Sprinkle the prawns with the garlic salt.
3. Thread two carrot batons through the hole you have made in the back of the prawns. (The carrot strips should be poking out of the top end of the prawns.)
4. Place the prawns and the buttermilk into a bowl and leave to soak for 30 minutes, stirring occasionally.
5. Heat the oil in a deep heavy-based pan until a breadcrumb sizzles and turns brown when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
6. Meanwhile, sieve the flour, polenta, chilli powder, salt and freshly ground black pepper onto a large plate.
7. Remove a prawn from the buttermilk (make sure there's lots of buttermilk on it).
8. Dredge the prawn in the spiced flour and polenta mixture to coat. Don't shake off the excess.
9. Repeat with five more prawns, then place the coated prawns carefully into the hot oil. Deep-fry for about 2-4 minutes, turning the prawns occasionally to keep them moving, until crisp and golden-brown all over, then remove with a slotted spoon and drain onto kitchen paper.
10. Repeat this process of dredging and deep-frying the remaining six prawns. (The tail of the shrimp should be protruding from one end and the carrot from the other - to resemble a firecracker.)
11. For the dipping sauce, mix the mayonnaise and hot chilli sauce together in a bowl.
12. To serve, place the bowl of dipping sauce into the centre of a large serving plate. Arrange the 'firecracker' prawns around the bowl and serve.
