1. 是插入语，插入语一般对一句话作一些附加的说明。通常与句中其它部分没有语法上的联系，将它删掉之后，句子结构仍然完整。这里的many of them就是个强调作用，强调有很多principles。你可以将many of them 去掉，就是They are the principles which I learnt at my mother's knee。这样可以清楚看出which修饰的是principle。

2. As for which beverage do people drink the most如果改成as for which beverage people drink the most，后面在接个分句是可以的。which引导的从句做as for 介词的宾语。单看你这句话As for which beverage do people drink the most?是错误的。

句子的主语是形容词的逻辑主语，这里的形容词修饰的是主语，表示主语的状态或结果，做主语补足语。
eg：He married young. 他年纪轻轻就结婚了。（young 修饰的是he,而非married，故用形容词）
He was found died. 这个died此时做主补。而这句话如果改成We found him died.这个died做的就是宾补了。

grow up as happy and healthy as possible用形容词则修饰的是前面的主语，而非grow up。而如果用happily则修饰的动词grow up。

下面的说的不对，（1）中many of them 是 的确实插入语 只做为补充修饰的作用，分析句子时可以去掉：They are the principles which I learnt at my mother's knee.
