食行生鲜买的徐溪黑猪里脊肉,一块500克。

切块后去筋,放入锅内加水,水要没过肉,加入2-3片姜,大火煮沸后撇去沫,小火煮40-60分钟,捞起来放凉,然后撕碎。

徒手撕肉,这是个考验耐心的活,越细越好。撕好倒入平底锅开小火不停的翻炒,感觉香味出来,颜色变深,大概十分钟左右。(也可能放烤箱烤,个人比较喜欢翻炒的感觉😬)放凉放入料理机打碎。

打碎后再放入平底锅继续小火翻炒十分钟左右即可。(同样可以放烤箱继续烤)翻炒过程中被香的忍不住偷吃了点,第一次吃不放任何调味料的肉,这是考验肉质新鲜度和口感的时候了,事实证明黑猪肉的确很香很好吃。
